We worked with Freshpak creating canapés that pair with iced tea to great success and fell in love with this refreshing berry blast iced tea. So tasty, healthy and refreshing! Berry Blast Iced Tea Serves 8
Ingredients 400g mixed berries, fresh or thawed ½ cup lemon juice 4 Freshpak Rooibos tea bags 2 litres boiling water ¾ cup light brown sugar Fresh berries, to garnish
Method1 Place fresh or frozen berries and 1/2 cup fresh lemon juice in a large saucepan over medium heat. Bring to a boil and cook, stirring occasionally for 5 minutes. Remove from heat, and pour mixture through a fine wire-mesh strainer into a bowl, using back of a spoon to squeeze out the juice. Discard solids and keep the leftover juice. Wipe the saucepan clean. 2 Pour just boiled water into the same saucepan, add tea bags, and leave to steep for 5 minutes. Discard tea bags and stir in 3/4 cup sugar and the mixed berry juice mixture. 3 Pour into a large jug and allow to reach room temperature before refrigerating. 4 Serve over lots of crushed ice with additional fresh berries as garnish.
