Ingredients 1 loaf sourdough/ciabtta bread
For the garlic butter 8 cloves garlic, crushed 250g butter, softened 10g fresh parsley, chopped 10g fresh oregano, chopped salt and pepper For the cheesiness 30g butter 30g flour 250ml milk 250g matured cheddar, grated 5ml mustard powder salt and black pepper MethodFor the garlic butter Place 10g of the butter and garlic into a small saucepan and cook over a medium heat for 3-4min. Remove and allow to cool. Add the remaining butter and fresh herbs. Season well with salt and pepper. Place aside until ready to be used. For the cheesiness Melt the butter in a small saucepan and add the flour, mix well until a paste has formed. Add the milk, a little at a time, mixing well before the next addition. Once all the milk has been added, bring the mixture to boil, stirring all the time. Add 200g of the cheese and mustard powder and season well.
To assemble the cheesy garlic bread Cut the laof into 3-4cm diamonds, making sure that you don’t cut all the way through the bread . Spread some of the butter mixture in between each slice followed by some cheese sauce. Top the loaf with the remaining cheese sauce and grated cheese. Bake in the oven at 180 °C until golden brown.
