Happy National Science Day! Nothing is more scientific in food than molecular gastronomy. We have put together a short video on how to make your own fruit pearls, sometimes referred to as fruit ‘caviar’, at home! See below for text and recipe.
Ingredients 250g smooth fruit puree 50g stock syrup 2g agar-agar 300ml vegetable oil Equipment Syringe Method 1 Place the vegetable oil in a glass or metal bowl and put in the freezer for 3 – 4 hours so that it is very cold. 2 In a saucepan, heat up the fruit puree, stock syrup and agar-agar. Whisk the mixture together to blend in the agar-agar powder to just about boiling point. Take it off the heat and allow to cool down for 3 minutes. 3 Take the cold oil out of the freezer and place into a bowl. Using the syringe slowly drop the mixture into the cold oil. The pearls will form immediately. Allow the pearls to rest in the oil for 5 minutes to set. 4 Take the pearls out of the water and rinse with cold water. Serve on a beautiful dessert plate to wow your guests!
