One source of inspiration for us is Sumac (Pronounced Soo-Mack)
What an amazing find, this purpley-pink spice is lemony in flavour with a hint of fruitiness. It is made by crushing the dried fruit of certain sumac tree species.
Sumac is one of the ingredients in the spice mix za’atar.
It’s great with fish or veggies & used in dips. It’s added at the end of cooking to maintain the lemony fresh zip that it gives dishes & it really should get more ‘airtime’ in South Africa kitchens.
