This delicious sweet and sour pork dish is so simple to make. It is best served with egg-fried rice.
Sweet and Sour Pork
Ingredients Sweet and sour sauce ¼ cup (60ml) brown sugar 2 tbsp (30ml) soy sauce ¼ cup (60ml) pineapple juice ¼ cup (60ml) white wine vinegar 1 tbsp (15ml) corn flour (mixed with 2 tbsp water) Pork 600g pork fillet, cubed 3 tbsp (45ml) soy sauce 1 tsp (5ml) corn flour oil for deep-frying Batter ¼ cup (60ml) flour ¼ cup (60ml) corn flour pinch of salt ¼ cup (60ml) sparkling water
Method To make the sauce: Place all sauce ingredients except the corn flour into a saucepan and heat gently over medium heat until the sugar has dissolved. Bring the sauce to the boil, add the diluted corn flour mix and allow to thicken. Set aside. Place pork into a glass bowl and add soy sauce and corn flour. Mix well to combine and set aside. To make the batter: Place flour, corn flour and salt into a bowl and mix lightly. Add ¼ cup sparkling water and mix until a smooth, thin batter is formed. You may need to add more water if the batter is too thick. Heat oil until hot. Dip the pork into the batter and deep fry until golden brown, crispy and cooked through. Remove from the oil using a slotted spoon and drain on some kitchen paper. Toss the crispy pork into the sweet and sour sauce and serve immediately with egg fried rice.
