Full of fragrant flavour and served with a delicious dipping sauce, these Vietnamese-inspired rolls make an impressive quick and fresh meal.
Makes 8 rolls
Ingredients For the spring rolls 12 medium prawns, peeled and deveined 50g rice vermicelli 8 round rice paper wrappers (and a few extra for the whoopsies) ½ cup bean sprouts handful of fresh coriander, picked handful of Thai basil, roughly torn 1 avocado 1 large carrots 1 spring onion ½ English cucumber 1 Tbs sesame oil For the dipping sauce 1/4 cup white wine vinegar 1/4 cup fish sauce 2 Tbs white sugar 2 Tbsp lime juice 1 clove garlic, minced ¼ tsp red pepper flakes
METHOD: 1 To make the dipping sauce, simply whisk together all the ingredients and set aside. 2 Bring a medium sized pot of water to the boil. Place the prawns in a steamer basket and place on top of the pot. Steam prawns until just pink roughly 3 minutes. Using a sharp knife slice each prawn in half. Set prawns aside to cool 3 Place the rice noodles into a bowl and pour boiling water over the noodles until they are completely submerged. Gently stir the noodles and once they are tender, drain and toss in the sesame oil to prevent them from sticking together. 4 Julienne the spring onion, carrots and English cucumber. Slice your avocado. 5 Place a clean, damp kitchen towel on a work surface. Fill a medium frying pan with 3cm of hot water from the tap. 6 Working one wrapper at a time, gently submerge the wrapper for about 15 seconds. Remove the wrapper from the water and place it on the towel. 7 Working quickly, place 3 shrimp pieces in a row down the middle of the wrapper. Place on top some rice noodles, julienned vegetables and lastly the sprouts and then fresh herbs. 8Fold the bottom half of the wrapper over the filling. Holding the whole thing firmly in place, fold the sides of the wrapper in. 9 Now, pressing firmly down to hold the folds in place, roll the entire wrapper horizontally up from the bottom to the top. 10 Repeat step 6 – 9 until all your ingredients have been used. 11 Enjoy your Vietnamese spring rolls with your homemade dipping sauce.
