This Monday Made Easy recipe is an absolute classic. Fresh basil, tomato and parmesan spaghetti. Ingredients handful of fresh basil leaves, roughly chopped 1 medium onion, finally chopped 2 cloves of garlic, finally chopped 1 tin of chopped tomatoes 1 tsp sugar olive oil 1 tbsp Balsamic vinegar salt pepper 250g spaghetti 15g parmesan cheese Method 1 Fill a large pot with three-quarters of water and a pinch of salt and bring to the boil. Once the water has started rapidly boiling, add your spaghetti and cook as to what the instructions say on the packet. You want to cook your pasta until it is ʺal denteʺ. Once you pasta is cooked, strain the pasta in a colander and give it a rinse under cold water, place it back into the pot, give it a good drizzle with the olive oil and sprinkle of salt. 2 In a saucepan add a 1-tablespoon of olive oil and gently fry the onions until soft and lightly golden. 3 Add your can of chopped tomatoes and garlic. Give it a good stir and add 1 teaspoon of sugar, salt and pepper. On a medium heat, allow this to cook down for 15 minutes. 4 Once the sauce has cooked down, add your balsamic vinegar and half of the fresh roughly chopped basil leaves to the sauce. 5 Add half of the sauce to the spaghetti and stir, coating all of the pasta. 6 Serve with finally grated parmesan cheese and garnish with the left over chopped basil leaves.
