With winter just around the corner, this dish is hearty and so hassle-free to prep, it’s perfect for a cooler weather #MondayMadeEasy dinner. Serve with some delicious cauliflower mash or a green salad and you have a great one-pot winter warmer!
Chicken, chorizo and white wine one-pot wonder
Ingredients 8 pieces chicken, thighs and drumsticks 1 red onion, peeled and sliced 1 punnet portabellini mushrooms, quartered 2 cloves garlic 100ml white wine 200g chorizo, sliced 200g rosa tomatoes 100g frozen peas Salt & pepper Simple green salad to serve
Method1 In an oven proof dish, place, chicken pieces, onions, mushrooms, garlic and white wine. Season well with salt and pepper. Bake in a hot oven at 180C for 30 minutes. 2 After 30 minutes, add the remaining ingredients, reserving the pea’s. 3 Cook for a further 20 minutes until the chicken is cooked through and chorizo crisp. Just before serving add the pea’s to warm through. 4 Serve with a simple green salad and/or cauliflower mash. image: Pinterest
