#MondayMadeEasy doesn’t get any easier than with a stir-fry. Try our chicken and leek stir-fry with snow peas for a super easy and tasty dinner.

Ingredients 45ml canola or grapeseed oil 60ml soy sauce 15ml of mirin 15ml toasted sesame oil 10ml cornstarch 5ml rice wine vinegar 1g Salt 6 chicken breasts, sliced thinly 6 cloves garlic, sliced thinly 2 leeks, cleaned and sliced thinly 150g snow peas, cleaned 150g baby corn Sesame seeds for garnish (optional)
Method1 Marinate the chicken: In a bowl large enough to hold the chicken combine 30ml of soy sauce, 15ml of mirin, 10ml of toasted sesame oil, 5ml cornstarch and a pinch of salt. Add the chicken and toss lightly then set aside for 10 minutes. 2 Make the sauce: In a small bowl, combine 30ml soy sauce, 10ml sesame oil, 5ml cornstarch, the rice wine vinegar and stir to combine then set aside. 3 Heat the wok on high heat for 2min 4 Add half the canola oil and swirl around. 5Add the chicken with marinade and stir fry for 2-3 minutes. 6 Scrape chicken onto a plate and carefully wipe out the wok with a paper towel. 7 Add the remaining canola oil to hot wok and fry the garlic and leeks, cook until soft approx 2-3 minutes. 8 Add the remaining mirin and the snow peas and stir fry for 2 minutes 9 Place the chicken pieces back into the wok. 10 Add the already combined sauce over everything, stir fry 1-2 minutes until the chicken is hot and the sauce is reduced. 11 Serve immediately.
