If you can’t decide if a chocolate or a ginger cookie is your favourite then fear no more!! This fantastic recipe uses both ingredients which equates to a double yum factor. These cookies are sophisticated enough for adults to enjoy but will keep the kiddies wanting for more too. Go on, give them a try.
Chocolate Cookies with sweet ginger pieces Makes 35 Ingredients 50g butter 200g good quality dark chocolate, chopped 1 can (385g) condensed milk 1 ½ cups (200g) self raising flour, sifted 40g milk chocolate, roughly chopped 40g (2 tbsp) ginger pieces in syrup, drained and roughly chopped Method1 Preheat the oven to 180C. 2 Lightly grease 3 baking trays. 3 Melt the dark chocolate and butter in a bowl over a pot of simmering water. (Don’t let the bowl touch the water). 4 Stir in the condensed milk and set aside to cool. 5 Mix in the flour, milk chocolate & ginger and chill until firm enough to handle. 6 Roll large teaspoon sized amounts of the mixture into little balls and place onto the baking trays, making sure there is enough space between the dough. 7 Bake for about 10 – 12 minutes. 8 Remove from the oven and allow to cool on a rack before enjoying. Tip Try using white chocolate and change the ginger to macadamias or hazelnuts. Make a chocolate ganache by melting equal parts chocolate to cream and leave to cool for a few minutes. Make a chocolate biscuit sandwich by spreading a teaspoon of ganache between two biscuits.
