Eton mess, an indulgent recipe which is perfect for a Sunday, is a messy combo of meringue, berries, cream and deliciousness, and it’s so quick to make. Give it a bash for a tasty afternoon treat.
Ingredients 5 large meringues 1 punnet mixed berries – raspberries are best 250ml cream 1 vanilla pod 2 Tbsp castor sugar
Method1 Roughly break up meringue and pop into a bowl. 2 Whip cream to soft peak, add castor sugar and seeds of one vanilla pod. 3 Place berries in a bowl and mash up slightly with the back of a fork. Leaving a few whole. 4 Gently fold cream and crushed berries into the meringue until just combined. Do not overmix, otherwise meringue goes soggy. Serve!
