When it comes to making homemade pasta one usually imagines painstakingly kneading for ages, not to mention flour covering every surface of the kitchen, but with this recipe it could not be easier or less messy! All you need is a food processor and either a large rolling pin or a simple pasta roller. A quick tip: while your pasta is resting in the fridge, whip up this fresh homemade tomato sauce!
Special Equipment Pasta roller or large rolling pin Small food processor
Ingredients 200g all purpose flour 2 eggs olive oil salt
Method1 Place the four and the two eggs in a food processor bowl and add a glug of olive oil. 2 Pulse until a breadcrumb texture forms. 3 Turn out onto a flat surface and knead briefly into a smooth ball. 4 Cover in cling film and place into the fridge for 15 minutes to rest. (While the pasta is resting, make our delicious homemade tomato sauce) 5 Once the dough has rested roll the pasta ball into a small log and then flatten slightly. 6 Place the pasta roller onto the widest setting and roll through the machine. Fold the pasta in half, lengthways, and repeat the process. Repeat one more time 7 Narrow the rollers by changing the machine setting by one notch, then pass the rolled pasta through the rollers again. Dust the pasta with flour. Repeat this process until the pasta is at the desired thickness.
Cutting the pasta8 Dust the pasta once more with flour. Cut the sheets into manageable lengths, around 30cm long, and fold lengthways. 9 Roll up the dough into a log, lengthways 10 Cut into sections, 5mm thick for tagliatelle and 2cm for parpadelle, or even keep the sheets whole for lasagne. 11 Plunge into salted, rolling boiling water and cook for about 1 minute or until the pasta floats to the top. 12 Remove from the boiling water and add to your pasta sauce
