We love Ginger Beer especially in the heat of summer. Jugs of ice-cold homemade Ginger Beer are a great addition to any braai. Here is a fantastic, classic recipe for this refreshing beverage – remember it needs to be made at least a day in advance to allow the yeast to work it’s magic.
3 tbsp (45ml) grated ginger
1 tbsp (15ml) ground ginger
5g (1/2 packet) active dry yeast
2 tbsp (30ml) raisins
5g fresh mint, for serving
lemon slices for serving
Place 1 litre of water, sugar, fresh and ground ginger into a saucepan and heat gently until sugar has dissolved.
Remove from heat and add the remaining 2 litres of cold water and the juice of 2 lemons.
Add yeast and stir until dissolved.
Add raisins and pour into a large container cover with a tea towel and allow to stand for at least 24 hours.
Strain, pour into bottles and refrigerate.
Serve chilled with fresh mint and lemon slices.
