This is a quick and delicious meal which is healthy and can be plated and served as a starter for a dinner party.

Ingredients
For the fish:
- 4 x 200g linefish portion
- Salt
- Pepper
- 4 skewers
For the salad:
- 2 sweetcorn on the cob, blanched and kernels cut off the cob
- 100g mixed baby leaves
- 50g cucumber sliced
- 50g mange tout, cut at an angle
- 20g pumpkin seeds, roasted
For the dressing:
- 100ml olive oil
- 20ml balsamic vinegar
- 30ml lemongrass and ginger cordial
- 5g Dijon mustard
- juice of 1 lemon
Method
For the fish
Cut the fish into 2cm x 2cm square. Season well with salt, pepper and drizzle with olive oil. Place equal amount of fish cubes onto 4 skewers. On a hot griddle plan, cook each side of the skewer until golden brown and cooked through.
For the salad:
Mix together all ingredients in a large bowl and lightly dress with salad dressing. Seasonal with csalt and pepper and toss well.
For the dressing:
Mix all ingredients together until emulsified. Season with salt and pepper.
