This is a quick and delicious meal which is healthy and can be plated and served as a starter for a dinner party.

Serves 4

Ingredients

For the fish:

  • 4 x 200g linefish portion
  • Salt
  • Pepper
  • 4 skewers

For the salad:

  • 2 sweetcorn on the cob, blanched and kernels cut off the cob
  • 100g mixed baby leaves
  • 50g cucumber sliced
  • 50g mange tout, cut at an angle
  • 20g pumpkin seeds, roasted

For the dressing:

  • 100ml olive oil
  • 20ml balsamic vinegar
  • 30ml lemongrass and ginger cordial
  • 5g Dijon mustard
  • juice of 1 lemon

Method

For the fish

Cut the fish into 2cm x 2cm square. Season well with salt, pepper and drizzle with olive oil. Place equal amount of fish cubes onto 4 skewers. On a hot griddle plan, cook each side of the skewer until golden brown and cooked through.

For the salad:

Mix together all ingredients in a large bowl and lightly dress with salad dressing. Seasonal with csalt and pepper and toss well.

For the dressing:

Mix all ingredients together until emulsified. Season with salt and pepper.
