This Monday Made Easy meal is not only quick and easy to prepare but it is also a family favourite.

Ingredients
600g hake, cut into finger length strips
salt and freshly ground pepper
¼ cup (60ml) flour
2 eggs, lightly beaten
1 cup (250ml) dried bread crumbs
vegetable oil for shallow frying
mayonnaise, for serving
1 lemon, quartered, for serving
Method
1 Place hake fillets onto a clean board and season with salt and pepper. Set aside.
2 Place flour, egg and breadcrumbs into separate bowls and place neatly in front of the hakefillets.
3 Dust each fish finger with the flour, shake off any excess then dip into the egg and then the breadcrumbs, making sure it’s well coated.Repeat this process until all fish fingers are coated.
4 Heat a frying pan with a little oil and gently fry fish fingers for about 1-2 minutes on each side or until cooked, golden brown and crispy.
5Remove from the pan and drain on absorbent paper.
6 Season with a little more salt and pepper and serve warm with mayonnaise and fresh lemon wedges.
