It really couldn’t get any fresher, tastier or basic than this homemade tomato sauce. Use this sauce as a base and experiment with different flavour additions such a chilli, toasted coriander seeds or even smoked paprika. This sauce can be made up to 2 days in advance and kept in a sealed jar in the fridge.
2kg fresh tomatoes 100g butter 1 clove of garlic 2 medium onions, finely chopped 2 Tbsp tomato paste handful of fresh basil leaves
1 Plunge the tomatoes into a pot of boiling water for 10 seconds. Refresh in iced water to stop the cooking process and peel the skin off and cut into cubes. 2 Melt the butter with the olive oil in a pan. 3 Fry the onions and garlic until slightly caramel in colour. 4 Add the tomato paste then the tomato chunks and cook until the tomatoes are softened and all the ingredients come together 5 Blend the sauce with stick blender until combined but not smooth. 6 Tear the basil roughly and fold through the sauce. 7 Season with salt and pepper
