It’s the first day of a new week and we’re getting back into the swing of things. Why not try this simple, quick and easy-to-remember recipe for some scrumptious pancakes for dinner or dessert as this recipe is great for sweet or savoury toppings.
One cup pancakes
Ingredients 1 egg 1 cup self raising flour 1 cup milk salt a small knob butter
Method1 In a bowl, combine the egg, flour and milk. Season batter with salt and whisk together. 2 Heat a large non stick frying pan and add a small knob of butter. Once the pan is nice and hot, gently spoon the batter into the pan using a ladle. 3 Cook for 1 – 2 minutes and use a spatula to them over when they start to brown on the bottom and tiny bubble appear on the top. 4 Once cooked on the other side, remove from the pan and place then on a plate. For a sweet pancakes, try topping them with condensed milk & chocolate sauce, Nutella or the traditional, cinnamon sugar and a squeeze of fresh lemon juice.
