This is a simple nut, seed and fruit brittle recipe that adds great texture and crunch to ice-cream and other desserts or perfect as a snack. It’s packed with flavour and really fun to make.
Nut, seed and apricot brittle
Makes 10 bars
Ingredients 340ml sugar ¼ cup (60ml) golden syrup 1 cup (250ml) water 100g toasted seed mix (sunflower, pumpkin seed, sesame and linseed) 50g almonds, roughly chopped 50g dried apricot, roughly chopped (or any other dried fruit)
Method1 Place sugar, syrup and water into a saucepan and heat slowly until sugar has dissolved. 2 Bring to the boil and cook until a dark caramel colour or until hard crack stage is reached. (Test by dropping a little caramel into cold water. If it is ready it will set hard and crack when broken). 3 Remove pot from heat and quickly stir in seeds, nuts and chopped apricot. 4 Pour into a baking tin lined with greaseproof paper and allow to set. 5 Break into pieces when hard and store in an airtight container.
