Happy Halloween! We hope you have a fa-boo-lous day filled with lots of spooky surprises and frightful delights like these terrifyingly tasty Pumpkin Spiced Cupcakes.
Yields: 24 Cupcakes
Cooking time: 10-15 minutes
Ingredients 3 ¼ Cups all-purpose flour 2 teaspoons baking powder 2 teaspoons ground cinnamon 1 ½ teaspoons ground cloves 1 teaspoon ground allspice 1 teaspoon ground nutmeg ½ teaspoon baking soda ½ teaspoon fine salt 1 ¾ cups of granulated sugar 1 cup vegetable oil 4 large eggs 1 ¾ pumpkin puree 1 cup of plain cream cheese ¼ cup soft butter 1 ½ cups of icing sugar ½ teaspoon vanilla paste ¼ teaspoon ground cinnamon ½ cup raw peanuts, chopped
Method1 Pre-heat the ovento 180C and line the muffin tins with cup cake papers. 2 Place the flour,baking powder, cinnamon, cloves, allspice, nutmeg, baking soda, and salt in alarge bowl and whisk to aerate and break up any lumps, set aside. 3 Place sugar andvegetable oil in a bowl and beat with your hand mixer until the sugar isincorporated. 4 Put the mixeronto medium speed and slowly add the eggs, one at a time. Once the eggs arecombined, add your pumpkin puree and beat to combine. 5Reduce the speedof the mixture and slowly add the dry ingredients to the mixture. Once themixture is combined, fill the cupcake papers- about ½ full. 6 Bake in the ovenfor 10-15 minutes. Place on a cooling rack to cool 7 Icing: Beat thebutter with the electric beater until soft. Add the cream cheese and icing sugar and incorporate until smooth. 8 Add the vanillapaste and ground cinnamon into the icing and mix though. Place into a pipingbag and set aside into the fridge until ready to ice the cupcakes. 9 Decorate: Pipe the top of the cupcakes and sprinkle the chopped peanuts over the top and enjoy!
