Our family roadtrips were synonymous with three things: Playing ‘I spy’. Competing to be the first to see the sea, and ‘padkos’. The padkos, or ‘road-food’ in English, was my favourite part of the journey and my most loved item on the menu? My mom’s famous pork sausage sandwiches – Delicious!! White bread, buttered with slices of cold pork sausage and slathered with tomato sauce and brown sauce. These were usually eaten before the sun came up! Our office favourites for padkos are: Boiled eggs with little cling wrap balls of salt. Droewors – Jono’s family dished out only 1 stick per person and they had to make it last!
