Nectarines have never looked this good… Spoil yourself and some very, very lucky friends with this yummy summer time dessert for brunch, lunch or dinner :-)Roasted Nectarines with an Almond and Biscuit Nut Centre
4 ripe nectarines, halved and pitted (can also use peaches or plums)
100g digestive biscuits, crushed
25g flaked almonds
1 tbsp (15ml) brown sugar
25g butter, melted
low fat vanilla yoghurt, to serve
Preheat oven to 180C.
Place halved nectarines skin side down on a roasting tray.
Mix together the biscuits, almonds and sugar and stir in the melted butter.
Place a spoonful of biscuit mixture in centre of each plum so that it resembles the pit and bake in oven for 20 – 25 minutes until nectarines are soft and topping is golden.
Serve warm with a spoon of low fat vanilla yoghurt.
