Soba Noodles are a gluten-free noodle that are a perfect accompaniment to Asian stir-fries, salads and broths. They are thinner than Udon noodles, which are made from wheat, and have a stronger flavour.
Soba noodles are made from buckwheat, a non-wheat flour, made from the seeds of the flowering buckwheat plant. The name may be misleading but buckwheat is not related to the wheat plant and is actually more closely linked to the rhubarb plant, making the noodles a perfect option for those who or gluten intolerant.
The noodles have a strong, nutty flavour and a chewy, grainy texture. They are sold dried and look like brown spaghetti.
