A Sour Cherry Mojito, is the perfect summer drink, combining the zinginess of limes with the freshness of seasonal cherries to create a fantastically refreshing drink.
- small handful of mint leaves
- 2 fresh limes, quartered
- 1 tbsp (15ml) castor sugar
- 3 tbsp (45ml) Goldcrest Sour Cherry juice
- 2 tbsp (30ml) white rum
- ½ cup (125ml) soda water
- crushed ice
- fresh cherries, for garnishing
Place half the mint leaves and the limes in a sturdy glass and crush with a muddler, or with the back of a spoon.
Add the sugar, sour cherry juice and white rum.
Fill the glass with crushed iced and top with soda and the rest of the mint leaves.
Stir to mix, garnish with fresh cherries and serve immediately.
