Warm Coconut Milk with Hazelnuts, Honey & Bourbon
serves 4 single servings
- 1 can coconut milk
- 1 ½ cups unsweetended almond milk
- ½ cup roasted hazelnuts (skins removed)
- ¼ cup honey
- 90ml bourbon
- ¼ tsp cinnamon
- pinch nutmeg
- Combine the coconut milk, almond milk and hazelnuts into a bowl and leave to stand for 2 hours. Transfer mixture into a blender and blend. Strain the hazelnut pulp from the milk.
- Add the honey, bourbon and spices into a sauce pot and bring to a gentle simmer, whisking occasionally to make sure the honey has loosened up. Taste and adjust honey/bourbon if needed.
Ladle into mugs and sprinkle with a little cinnamon and serve with almond biscotti.
