Source Food developed the full menu offering for Milas at The MARC in Johannesburg, delivering the project from concept through to implementation. Our scope included menu ideation and structure, detailed recipe development and testing, comprehensive food costings, supplier sourcing, and hands-on staff training to ensure consistent execution in the kitchen. The final menu was designed to deliver a well-rounded dining experience and included breakfast, lunch, desserts, and a curated range of speciality beverages.

THE OLD VILLAGE

Source Food redeveloped the full menu offering for The Old Village Restaurant in Citrusdal, carefully considering the restaurant’s slightly remote location and the need to appeal to both local clientele and passing travellers. The new menu was designed to feel modern and fresh while remaining practical and achievable for the kitchen team.
Our scope included concept development, recipe creation and standardisation, supplier sourcing, and comprehensive staff training to ensure consistent execution. The menu was developed across breakfast, lunch, and dinner, including a range of desserts.
In addition, Source Food produced a professional food photography shoot, creating a library of high-quality menu images to support the restaurant’s marketing and visual presentation. The project focused on ensuring a smooth and sustainable implementation of the new menu, enabling the restaurant to continue operating efficiently while elevating the overall food offering.

BRAVO

Source Food was appointed as a lead consultancy partner for the development of Bravo, a large-scale QSR café concept in Ndola, Zambia. The project spanned over a year and involved building the operation from the ground up, ensuring that every element of the food and beverage offering was commercially viable, operationally efficient, and consistently executable.
Our scope included full menu development for both the sit-down restaurant and the grab-and-go café, alongside recipe development, standardisation, and extensive product testing. Source Food also designed the café uniforms, packaging systems, and menu layouts to create a cohesive brand and service experience.
A key component of the project was a comprehensive 7-day on-site training programme in Zambia, where our team trained staff across both Back of House and Front of House operations, covering food preparation, beverage service, and customer service standards. We also sourced and established supplier relationships for equipment, packaging, branded bottled water, and a curated beverage range, connecting South African suppliers with distribution opportunities across Zambia.
Following the launch, Source Food conducted a series of auditing and refresher training visits to ensure standards were maintained. We continue to work with Bravo as an ongoing consultant, supporting product consistency, operational standards, and the continued evolution of the brand.

CRACKER ZACS

Source Food developed the food offering for Cracker Zac’s Restaurant Bar, supporting the brand across two locations in Menlyn, Pretoria and The Zone in Rosebank. The project focused on creating a menu that complemented the venue’s energetic bar environment while remaining operationally efficient and consistent across both sites.
Our scope included menu development, detailed recipe creation and standardisation, and comprehensive staff training to ensure the kitchen teams could execute the menu consistently. Source Food also conducted a professional food photography shoot to produce high-quality visuals for marketing and menu use.
Following implementation, we conducted auditing and refresher training sessions to maintain product quality and ensure the offering continued to meet the brand’s standards across both locations.

SHELL CAFE

Source Food is the chosen food consultancy partner for Shell South Africa, playing a key role in the local implementation of Shell Café, a global foodservice initiative within the Shell group. Our team was responsible for adapting and executing the concept for the South African market, ensuring the offering was both commercially viable and operationally scalable across multiple forecourt locations.

Source Food led the development of the full food and beverage programme, including menu development, recipe writing, product testing, and the standardisation of all food items to ensure consistent execution across sites. We also oversaw the sourcing of suppliers and designed the food packaging system to support the operational requirements of a high-volume forecourt environment.

Our scope extended beyond menu development to include coffee consumables management, food merchandising planograms, stills photography, and the production of training videos and materials. Source Food conducted extensive multi-site staff training and was present at site launches to ensure correct implementation of the concept.

Over the course of a year, we implemented a structured rollout and auditing process to support the successful adoption of the Shell Café standards across South Africa. Source Food continues to play a role in maintaining these standards and supporting the ongoing development of the Shell Café food programme.

NOLINS CAFE

Source Food supported the launch of the café menu offering for Nolin’s Café, an independent café located at an Engen forecourt in Hout Bay. The project focused on establishing a clear and practical food offering suited to a high-traffic forecourt environment.

Our scope included developing the operational training programme for the café team, ensuring staff were equipped to prepare and present the menu consistently and efficiently. Source Food also designed the food packaging system, creating practical, branded solutions suited to grab-and-go retail while maintaining product quality and presentation.
